This year I decided to make St. Patrick’s Day treats for Lucas’ daycare. I was originally thinking of doing shamrock sugar cut out cookies but wasn’t quite in the decorating mood…especially over 30 cookies. So, I decided to make sugar cookie bars instead. They have the same delicious sugar cookie taste but take a fraction of the time. They also have this delicious chewiness when baked as a bar…yummy!
My sister had tried out this recipe the week before and said she wasn’t going back to the work of making traditional sugar cookies after trying these bars! I had to give them a try and they absolutely did not disappoint.
