A delicious and easy weeknight meal with only a few ingredients and made in one pot!
I came across this recipe a month ago and have literally made it every week since! It’s so delicious and very easy to make, which is exactly what I look for in a recipe for a weeknight. The original recipe can be found at South Your Mouth: Taco Rice with Queso. I made a few adjustments and I think this easy one pot cheesy taco rice a real weeknight winner!
I am obsessed with Mexican food and think I could have it almost every day if my husband would let me. This is also a winner with my almost 2-year-old. He shovels it in!
What I have come to learn since having Lucas is that you better get supper made rather quickly if you want to avoid the hungry & tired toddler meltdown! I am always looking for simple recipes that I can have done in under 30 minutes.
Ingredients
This recipe is very easy to follow and only uses the following ingredients:
- Ground Beef
- White Rice
- Onion
- Tomato Sauce
- Chicken Broth
- Taco Seasoning
- Garlic Powder
- Salt & Pepper
- Queso
How to Make One Pot Cheesy Taco Rice
First, you brown the pound of ground beef with the chopped onion and season the meat with salt and pepper. Once that’s cooked, you will drain the grease if needed. Next add in the rice, tomato sauce, chicken broth, taco seasoning, garlic power, and salt & pepper.
This is what the mixture will look like at the beginning.
Bring that mixture to a boil and then reduce to a simmer for 20-25 minutes, stirring occasionally. Once the rice is completely cooked it’s done!
Then heat up your queso of choice to drizzle (or pour 😋) over the top. You can also add sour cream for a little tang & creaminess. This is seriously delicious, and it makes great leftovers for lunch the next day too! It is something very easy to make for those of us who don’t like to slave over the stove on a weeknight and its kid approved!
One Pot Cheesy Taco Rice
Ingredients
- 1 lb Ground Beef
- 1 Small Onion
- Salt & Pepper for Ground Beef
- 1 1/2 cups Uncooked White Rice
- 1 packet Taco Seasoning
- 1 tsp Garlic Powder
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 4 cups Chicken Broth
- 1 cup Tomato Sauce
- Queso Cheese Sauce of choice
Instructions
- Brown ground beef and onion in a deep skillet or pot and season with salt and pepper. Once browned, drain any access grease.
- Add rice, chicken broth, tomato sauce, taco seasoning, garlic powder, and salt & pepper. Stir well to incorporate.
- Bring mixture to a gentle boil then reduce to a simmer. Cover skillet and cook for 20-25 minutes or until rice is tender, stirring occasionally.
- When rice is tender, heat up your queso cheese sauce, and drizzle over the top. You can also top with sour cream.
